TrĂªs Receitas Roubado de Catalysador

Chicken Penne Portobella

"Grilled chicken, portobella mushrooms, spinach, plum tomatoes in a Dijon cream sauce".

- Heat pan w/ little oil

- When pan is hot, add 5 slices portobella mushrooms

- Then 4 slices of chicken, 5 if small.

- Add small amount of diced white onions.

- Add salt/pepper.

- Saute.

- When done, add pinch garlic, one tablespoon mustard and a squirt of white wine and stir.

- Add cream to barely cover.

- Let reduce.

- Once cream is reduced, add small handful of diced tomatoes and a handful of spinach.

- Toss w/ heated (cooked) penne noodles.

- To taste, add small amount of butter, pinch Parmesan cheese and salt/pepper if needed.

- Add parsley/basil.

Chourico Tagliatelle

"Portuguese sausage, leeks, assorted mushrooms with tomato basil sauce."

- Heat pan w/ oil.

- Add chourico sausage.

- Small handful of mixed mushrooms, small pinch of leeks, small handful of diced onions, salt/pepper.

- Saute.

- Add pinch garlic, splash wine, 6 ounces ladle of tomato sauce.

- Add butter.

- Let reduce.

- Add hot tagliatelle noodles.

- Toss nonstop until sauce sticks to noodles.

- Add Parmesan to taste.

- Add basil/parsley.


Seafood Linguine

"4 tiger shrimp, calamari, scallops, mussels with tomato basil sauce."

- Hot pan with oil.

- In bowl, add 4/5 mussels, 4 peeled shrimp, 4 scallops, 2 pieces of sliced calamari and small amount of white onion.

- Add bowl to very hot pan.

- Saute.

- Salt/pepper to taste.

- Squirt lemon, punch garlic, squirt white wine, 2 ounce ladle of bisque, half large ladle of tomato sauce, butter, touch of cream.

- Cover w/ another pan to steam mussels.

- After 3 minutes, stir.

- Add herbs - parsley, basil, cilantro.

- Add linguine noodles.

- Toss until all sauce sticks to noodles.
