Batgirl's "Eggs Not Over, But Easy"

The perfect pick me up for a rainy October Saturday morning, or any time one if feeling stupid and self-destructive.

2 eggs

1 T unsalted butter

Freshly ground salt and freshly cracked pepper.

Melt butter in medium non-stick pan over medium flame. Break eggs into pan and reduce flame to low. Cook slowly until whites are set completely and yolks begin to thicken, but are not hard. Flip eggs over carefully and continue to cook for 15 seconds. Serve sprinkled with freshly cracked pepper and a pinch of salt.
